I love this recipe. The brownies are super fudgy. There is no butter and less sugar than most brownie recipes but still have amazing taste and texture.

Ingredients

300g Vegan Dark Chocolate

150g Plain Gluten Free Flour

100ml Gluten Free Oat milk

30g Coconut oil
-
50g Brown Sugar
-
1tbsp Psyllium husk (mixed with 3 tbsp of water)

1tsp vanilla
-
½ tsp salt

½ gluten free baking powder

Some chopped walnuts for topping
Directions
Melt your dark chocolate. I usually use a bain marie.
In a bowl add a tbsp of psyllium husk and 3 tbsp of water (this is your “egg”)
While that is melting slowly. Sieve your gluten free white flour into a bowl and mix in baking powder, sugar and salt
Add the melted coconut oil into the bowl along with the Psyllium husk(which will have formed a gel with the 3 tbsp of water).
Mix in vanilla extract and oat milk and mix well
Once the chocolate is melted add it in and beat again well
Put some baking paper on a rectangular brownie tin - around 9x9inch
Sprinkle the chopped walnuts on the top
Bake for about 25-35 minutes at 160 or until a knife or skewer comes out clean. You need to be careful not to leave them in too long or they will get too cakey and not fudgey enough.
Let them cool down before cutting them so that they can fully firm up before eating.
