Mushroom & Bacon Risotto

Risotto is something I thought would be really difficult to make but it's actually really simple.
Ingredients

200g Risotto Rice

700g Water
-
1 Veg Stock
-
1tsp Paprika
-
1tsp Garlic powder
-
½tsp Garlic salt
-
Salt + Pepper
-
300g Mushrooms
-
4 Streaky bacon strips
-
2tbsp Nutritional Yeast
Directions
Add rice & stock to the water and bring to the boil. Once boiling turn down low and let it simmer with the lid on and stir occasionally
Peel/wash mushroom and chop them. Fry them in a pan with a little oil, salt and pepper.
I usually airfry the bacon but if you don't have any airfryer you can fry them in a pan.
Back to the risotto, after about 20 mins the rice will start to get soft. You can them add in the spices - Garlic, garlic salt, paprika, nutritional yeast (this will give it that cheesy taste). Extra salt and pepper as much as you need to.
Add in bacon and mushrooms and there you go, it's as easy as that.
