These are a healthier take on the Viral Dubai Chocolate bars! Those Dubai chocolate bars are not gluten free so I felt like I was missing out, so I decided to make a delicious pistachio chocolate cookie that had no added sugar but was still delicious. The pea protein powder worked well to give it an extra green colour and some extra protein - 7.5g of Protein per cookie 💪
 
                      Ingredients
- 
50g Pistachios (unsalted) 
- 
100g Medjool Dates (pitted) 
- 
60g Peanut Butter (100% peanut smooth) 
- 
25g Pea Protein Powder (any mild tasting protein powder would work or you can leave it out) 
- 
¼ tsp Salt (if the pistachio nuts are unsalted) 
- 
100g Dark Chocolate (for topping) 
Directions
- Take the pits out of the dates and add to a bowl with some boiling water for a few minutes (this will soften them) 
- Chop up the pistachio nuts, or add them to a food processor. (If you can buy pistachios de shelled already that is ideal or else add on about 10 minutes extra to take the shells off) 
- Drain the dates and add to food processor along with the rest of the ingredients and mix until it resembles a dough ball. If you don’t have a food processor you can all the ingredients to a bowl and mix with a fork or your hands. 
- Cut into about 8 cookies, use a shape cutter or make them into cookies with your hands. I used a heart cutter as it happens to be Valentines Day ❤️ 
- Melt the chocolate and dip the cookies in and cover them with a thin layer of chocolate. 
- Pop in the fridge for an hour or more and then enjoy!
