Gluten Free Oreo Cheesecake

Ingredients

1 pack of Gluten Free Oreos (12oz/353g)

60g butter

250ml full fat cream

300g soft cheese

60g Icing sugar
Directions
Separate the oreo biscuit and the filling into 2 bowls
Crunch the oreo biscuit in a bag with a rolling pin or in a food processor
Melt the butter and mash in about 2 thirds of the oreo biscuit crumbs. (optional leave a couple ofcookies aside for decorating the top)
Line your 7 / 8 inch cheesecake tin and add in the base mix and pat it down with a spatula to make it smooth
In a bowl add the cream cheese, most of the remaining oreo filling and the powdered sugar and mix well
Beat your cream in a separate bowl until it is thick
Add the cream and the remaining oreo biscuit mix to the bowl and fold it all together
Spoon the cream mix in on top of your biscuit base and decorate with any leftover cookies and biscuit mix
Place in the fridge for at least a couple of hours
