This is a healthier version of ginger cookies. I used buckwheat flour and as little sugar as possible.
The perfect treat if you are craving something sweet but don't want a tonne of sugar. The ingredients make about 6 cookies so just double up if you are making for a few people.
Ingredients

80g Buckwheat Flour

20g Almond Flour

2.5 tsp Ginger

1tsp soda

30g coconut oil

1tbsp golden syrup

10g coconut sugar

Pinch of salt & pepper
Directions
Add buckwheat, almond flour and soda to mixing bowl.
Heat up coconut oil in microwave for 30 seconds so it becomes a liquid
Add the oil, coconut sugar, golden syrup and salt and pepper into the mixing bowl and mix well with a spoon
You might need to ass a tsp or 2 of water to make the mixture into a dough consistency
Shape into about 6 cookies and place on a some baking parchment on a oven tray
Preheat oven to 160 and bake for 12-15 mins. Turn then half way through.
