It doesn't get more simple than this recipe and it's so tasty. You wouldn't know if was sugar free.
I used small 7x5 inch dish which is just enough for 2 people so you may need to scale the ingredients accordingly.
Ingredients
-
200g Blueberries
-
1tbsp Corn Flour
-
60g Oats
-
30g Buckwheat Flour
-
1tbsp flaxseed
-
20g Coconut oil (I use the flavourless one from the heathfood store)
-
2tbsp Maple Syrup
-
Pinch of salt
-
(optional) Small handful of pumpkin or any seeds to sprinkle on top
Directions
Add the blueberries to a bowl and mash them for a minute or two, it doesn't have to be smooth. Add in a tablespoon of corn flour and mix.
In a separate bowl add the dry in ingredients - oats, flour, flaxseed and salt. Give it a mix with a spoon
Melt the coconut oil and add it into the dry ingredients along with the maple syrup.
Grease a small oven dish/try about 7x5 inch with some oil
Add in the layer of blueberries on the bottom and them sprinkle the oat crumble mixture on top of the blueberries. You can sprinkle the seeds on top too.
Pre heat the over to 180 degrees C / 350 Fahrenheit. Bake in the oven for about 45mins or until the top is golden brown
