Gluten Free Banana Bread Recipe
This is my healthier version of the classic Banana Bread using as little sugar as possible, but still tastes great.
For this recipe I use a ceramic oven dish that is 7 x 5 inch and 2 inch deep.
100g Plain Flour (I use a gluten free blend by Doves)
60g Ground Almonds
40g Oat Flour
1½ tsp Baking Powder
½ tsp Salt
200g / 2 Large Ripe Bananas
30g Coconut Oil
1tsp Apple Cider Vinegar
80g Almond Milk
1tsp Vanilla Essence
Chocolate chips (optional)
Add all the dry ingredients into a bowl and give it a quick mix with a spoon
Soak the dates in hot water for 2 minutes to soften them. Then drain them and mash them up with a masher or food processor.
Mash up the banana in another bowl and add in the wet ingredients and the dates and mix it up.
Add the dry ingredients into the bowl of wet ingredients and mix until combined
Grease up an oven dish with oil or butter and add in the batter. [Optional sprinkle chocolate bits on top]
Preheat oven to 170°C for about 40 mins. When it's done take it out and stick a knife in it and see if it comes out clean. If not you might need to leave it back in for a few more minutes.
