Gluten Free Chilli Con Carne

This chilli is really tasty and easy to make. It's a healthy hearty dish that can as spicy as you like it. I usually chop up some iceberg lettuce which gives it a nice crunch and calms the spiciness.

Ingredients

500g Beef Mince

1 Onion
-
6 Mushrooms
-
1 Garlic clove
-
1 can of kidney beans
-
1 can of tomato
-
Sweetcorn
-
1 veg stock
-
1 tsp chilli powder (more or less depending on how spicy you like it)

1 red pepper
-
1 tsp paprika

Salt & Pepper
Directions
Fry onion, garlic, mushrooms, red pepper and sweetcorn with olive oil until they've turned brown
Add mince beef to a pot with some olive oil and fry until it turns brown.
Boil a cup of water and add in the veg stock
When the veg has softened and turned a golden brown add to the pot of mince.
Add in the can of tomato, kidney beans (drained), and veg stock.
Add in chilli powder, paprika, salt and pepper
Leave to simmer for at least a half hour. Taste and add more chilli powder if needed.
