This was the first thing I ever baked. I wanted to make something that wasn't too unhealthy and they turned out great :)
Ingredients

1 Cup Gluten Free Plain Flour

½ Cup rolled oats

¼ Cup Brown sugar

2 tsp baking powder

1 tsp baking soda
-
1 tsp salt
-
1 egg
-
½ cup oat milk
-
1 tbsp coconut oil (I used a flavourless one)

1 tsp vanilla extract
-
1 banana
-
1 tbsp apple cider vinegar
Directions
Combine flour, oats, sugar, baking powder, soda, and salt.
Mash up the banana in a large bowl. Beat in the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly.
Stir the flour mixture into the banana mixture until just combined.
Line a 4 large muffin tin with paper bake cups, and add in the mix.
Preheat oven and bake at 200 degrees C (400 degrees F) for 18 to 20 minutes.
